Chitinase is a chitinase mainly found in Bacillus species and uses colloidal chitin as a substrate. The Km and Vmax of Chitinase are 4.28 mg/mL and 14.29 μg/(Min·mL) respectively. The final enzymatic hydrolysis product is N-acetylglucosamine, and the monomer and dimer contents are 14.33% and 85.67% respectively.
