Tyrosinase (From mushrooms, ≥1000 units/mg dry weight) is an enzyme that catalyzes the oxidation of phenolic compounds (such as tyrosine, phenolic compounds, etc.) into quinones[1]. Tyrosinase is a copper-containing enzyme found in animal and plant tissues that catalyzes the oxidation of tyrosine to produce melanin and other pigments. It is present in melanosomes synthesized by skin melanocytes and is encoded by the TYR gene[2]. Tyrosinase is widely present in nature and is usually extracted from wild mushrooms[3]. Tyrosinase is also involved in the browning reaction, causing damaged fruits or plant tissues to turn brown[4]. Tyrosinase contains copper ions, with a copper content of about 0.25%[5]. The ultraviolet absorption peaks of Tyrosinase are at 273nm and 330nm[6]. The molecular weight of this product is about 128kDa, the specific activity is ≥1000units/mg dry weight, and the optimal pH is 6.0-7.0.
