Advanced glycation end products (AGEs) is a series of stable compounds produced by non-enzymatic reactions of reducing sugars with proteins, lipids or nucleic acids. Advanced glycation end products is often used as a target for evaluating the inhibitory effects of anti-glycosylation compounds[1].
